Pumpkin-Beer-Soup

Ingredients

2 shallots, 30 g of clarified butter, 400 g of pumpkin meat(Hokkaido), 2 tablespoons of vinegar (white wine vinegar), 1 liter of cattle broth, salt and pepper,some sugar,1 bottle of beer(500ml),125ml whipped cream,cress.



method

Shallots finely throw dice and in the hot fat fast sear. The pumpkin cut in cube add, with vinegar wipe off, with broth pour and softy cook. The whole pass, with salt, pepper and sugar taste. With the beer fill in, again heat up which hit cream and unterlift. Strew with cress,croutons and immediately serve.
