Crispy Coconut Cookies from Hawaii

Hawaiian Crispy Coconut Cookies

1 cup butter or margarine               1 1/2 teaspoon vanilla extract
1 cup sugar                                     2 cups flour
1 1/2 cups shredded coconut

In a large bowl, cream butter and sugar until light and fluffy.  Add vanilla extract; beat thoroughly.  Mix in flour; add coconut and mix well.  Shape into walnut-size balls and place on ungreased baking sheets; flatten with bottom of a glass dipped in flour.  Bake at 300 degrees for 20 -25 minutes or until golden brown.  Cool completely and store in airtight container at room temperature.

Yields: About 4 dozen
