Pre- heat oven at 350 degrees or (180 degrees C)

For this recipe you will need:

Parchment paper for easy cleaning, i roll.

1 1/2 cups of parkay margarine, (butter is awsome too). = 375ml

2 cups of brown sugar/ golden is fine- packed and soft!!= 500ml

1 cup of white sugar, u can reduce it to 1/2 cup of white sugar, for less sweet ness= 250ml/125ml

2 room temp eggs

1/2 cup of water ( a trick i use is to soak the raisins all night in a cup of water and then use a half a cup)

2 tsp of real vanilla extract.= 10ml

2 cups of flour.= 500ml

2 tsp of salt=10ml

2 tsp of cinnamon.=10ml

1/2 tsp of clove.= 2ml

1 tsp of soda.= 5ml

1 tsp of baking powder (freshly purchased, is always the way to go)= 5ml

2 cups of raisins soaked over night if older, or fresh golden are awesome, sultana will do.= 500ml

1 cup of chopped nuts ( what ever you like)=250 ml

6 cups of quick oats= 1.5 L

Now i mix 1 batch at a time in my heavy duty kitchen aid mixer (575 watts), if you don;t have one be prepared to put some muscle in this recipe. Its a healthy recipe, that can be altered with trail nuts or dried fruit ( soak it first in a fruit juice to compliment the dried fruit) To get over 100 cookies, do the recipe 3 times

Mix Margarine, sugars, eggs, water, vanilla, add salt, cinnamon,clove, soda, baking powder, add raisins,nuts, then mix in flour, then add 6 cups of quick oats. (here is where you need muscle or a very strong mixer, mine is a 575 watter, so anything under that may strain )  Mix well. These cookies should be stiff, so do a test cookie, if it spreads to wide add more flour.

Drop with mini ice cream scoops, on parchment lined cookies trays for easier clean up they r sticky-, but i wanted you to see the type of ice cream scoop, makes perfect cookies ever time

Bake at 350 degrees (180c f) oven on middle rack for 6 min to 9 min for small cookies or 12-15 min for a large ice cream scoop. If u want chew cookies, cooked until edges are lightly brown. Cookies always continue to cook on the tray, so if a little under done leave them on the tray for a few min. and then Immediately remove from cookie sheets as they will stick.Parchment paper makes it so much easier for you.. i hope you love these favorites.. great for any bake sale!

 

Helpful hint:

a 3lb blue box of parkay margarine will do 4 batches, also 3/4 of a bag of a 2kg of yellow/brown sugar, u will need approx 2.5 kgs of quick oats..

Store in air tight container or freeze extra, makes about 6 doz to 8 dozen, x the recipe by 3 for over 100 large cookies. Of all my cookies this is the one that people love the most
