3 layer apple pie- old time favorite Bottom one is the blueberry apple with crumb coating

Prep-time= how long to make it and cook time also and for how long(PREP 20 MIN)
For even cooking place on cookie sheet on middle rack! Let cool 4 hours before cutting.

Description of ingredients and there amounts of each needed product.
Then list
5 to 6 med apples gala, granny, Fuji peeled, cored and cut into equal pieces
1/2 cup sugar
tspn of cinnamon, and or optional nutmeg 1/8th tspn
1 deep dish tender-flake frozen pie shells or your own
1 fresh lemon
1heaping tspn of flour9 this absorbs the excess juices from the apples)
1 well beaten large egg
1 deep dish frozen pie shells or if your really adventurist make your own dough!!
separate them to UN thaw, add 1 level tsp n of flour, spread through the shell bottom only, sides too. Another bowl prepare peeled apples
2- cut/skinned apples up to 5 apples or more may be more if you want 2 pies double everything (5 large apples, different flavors) this means softer apples( macs Spartans) are easy to cook fast so larger cuts, GRANNY'S apples last longer cooking so cut smaller bites (to cook) , so everything cooks well even if a few are still l have a fresh bite to them  
3-  sugarthe apples with a combined of 1/2 cup sugar,2 tbsp of flour, 1/2 cup of cornstarch,, 1 tsp n of cinnamon & nutmeg is also optional 1/8th of tspn, toss with apples and set aside for 1 hour to juice
Add to bottom pie shell heaping over, add juices from apples, (make it heaping as they cook down, and you will have an empty shell!
4- then put water around the edge and gently attach the top shell to the bottom shell, pinching them to sealing the crust in. need to cut slits in the top to allow moisture to escape (4) slits& then beat and egg so its combined  and paint the crust with the egg mixture, that makes that golden shell.!
Cook for 40 min at a 375' degree oven until golden brown, or watch 4 the juices come to bubbling to the top. If pie is golden brown remove the pie.

Crumb Coating- option is 1/2 cup flour 1/2 cup oats, 1/4 cup nuts crushed and 1/2 cup brown sugar, and 1/2 cup of butter to cut in and make a pastry granola type topping, top with butter, gen tally press into the pie, make sure this crust is even to get a equal result,  and cook the same temp, with filling bubbling up to ensure its cooked!
Place pie in cooling area for 4 hours before slicing.
if you layer the different apples it creates a one of the kind flavor. Enjoy!
